July is National Blueberry Month Celebrate with Blueberry Crumb Coffee Cake or Spiced Blueberry Cake
Celebrate National Blueberry Month by making a pot of delicious coffee or tea and serving it with this Blueberry Crumb Coffee Cake or the Spiced Blueberry Cake. And continue to eat blueberries all year. These tiny berries are one of the most nutritious foods we have so take advantage of them at least once a week.
BLUEBERRY CRUMB COFFEE CAKE
1 1/2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
1/2 cup sugar
1 egg
2 cups fresh or frozen blueberries, not thawed
1/2 cup milk
TOPPING:
1/4 cup all-purpose flour
1/4 cup sugar
1/2 tsp cinnamon
3 tbsp butter
Preheat oven to 375 degrees.
Mix flour, baking powder and salt in a small bowl; set aside.
Cream softened butter and sugar in a large mixing bowl until light and fluffy; beat in egg. Place blueberries in a bowl and dust with a small amount of the flour mixture. Toss gently to coat all berries. Add the remaining flour mixture to the creamed mixture alternating with the milk. Mix continually through the adding process. Gently fold the blueberries into the batter.
To make topping, mix flour, sugar, and cinnamon together in a small bowl. Cut in the butter until crumbly.
Spread the batter into the prepared baking dish. Sprinkle the topping over the batter. Bake for 45 minutes at 375 degrees until topping is golden brown. Cut into squares. Serve warm.
SPICED BLUEBERRY CAKE
1 cup shortening or butter (add 1 tsp salt if you use shortening).
2 cups white sugar
4 eggs
3 cups all-purpose flour, sifted
2 tsps baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp ground cloves
1 tsp nutmeg
1 tsp allspice
1 cup buttermilk
2 cups blueberries (use whole can of blueberries, juice and all)
Preheat oven to 350 degrees.
Cream butter and add sugar gradually creaming until fluffy. Beat the eggs well and blend into the sugar mixture. Add buttermilk and stir mixture well. Sift the flour, baking soda, baking powder, and the spices together; beat into the creamy mixture. Gently fold in the blueberries until well mixed in. Pour batter into a greased 9x13-inch pan and bake at 350 degrees for 40 to 45 minutes or until cake tests done.
Good with your favorite chocolate frosting.
Stays moist for a long time.
